Cranberry-Brie Bites, Ham and Cheese in Puff Pastry

Cranberry-Brie Bites
Ingredients
1 1/2 cups cranberry sauce (use homemade or store-bought cranberry sauce)
1 puff pastry sheet
1 brie triangle, chilled
Preparation
Preheat oven to 375 degrees F.
Thaw puffy pastry sheet flat. Cut puff pastry sheet into approximately 3-inch squares and place them into mini muffin tins, pressing them into the shape of the muffin hole. Place a 1-inch slice of brie in the center of each puff pastry and then top it with approximately 1 tablespoon of cranberry sauce.
Bake 10 minutes or until puff pastry corners are toasted light brown. Let cool 5 minutes before serving.
Yield: 20 bites. Prep Time: 20 minutes. Cook Time: 30 minutes. Difficulty: Easy

Ham and Cheese in Puff Pastry
Serving Size: 6
Ingredients:
1 package (2 sheets) frozen puff pastry, defrosted (recommended: Pepperidge Farm)
2 tablespoons Dijon mustard
1/4 pound black forest ham, sliced
1/2 pound Swiss Gruyere cheese, sliced
1 egg, beaten with 1 tablespoon water, for egg wash
Directions:
Preheat the oven to 450 degrees F. Place a piece of parchment paper on a sheet pan.
Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.
Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape.
Bake for 20 to 25 minutes, until puffed and golden brown. Allow to cool for a few minutes and serve hot or warm.

Boursin Stuffed Mushrooms
Ingredients
30-40 MED. MUSHROOMS
1 C. BOURSIN CHEESE
3 TBSP. BUTTER, MELTED
Preparation
Preheat oven to 350. Wipe mushrooms with damp towel - remove & discard stems. Brush the bottom of each mushroom with melted butter & fill cavity with cheese. Place them on an ungreased cookie sheet, bake 30 min.

Holiday Cocktail Recipes
Kir
3 oz white wine
¼ oz cream de cassis
Pour wine over 2 -3 fresh raspberries and add cassis. Swirl to mix.
Kir Royal
3 oz champagne
¼ oz cream de cassis
Place raspberries in champagne flute pour ¼ oz cassis in glass, add 3 oz champagne.
Non-Alcoholic Kir
Use Sparkling Apple Cider with a little cherry juice!
Pink Chambord Cocktail
Pour ½ oz Rose wine and ½ oz Chambord in a shaker.
Add 1 oz. clear vodka and a splash of Grenadine.
Add ice and shake. Strain into a cocktail glass over a ripe raspberry.
Fill the rest of the glass with 2 oz club soda.
Coat rim of glass with sugar if desired.
Santa Baby
1 oz Brandy
½ oz Ameretto
½ oz Cherry Brandy (if using cherry juice, add a little more brandy)
1 oz Cranberry Juice
Fill with ice and shake
Garnish with orange peel, cherry and dried cranberries
Winter Snowball
½ oz Bailey’s Irish Cream
½ oz Chambord
Splash of Grenadine
Shake with ice in shaker and pour into cocktail glass. Yummy after dinner drink!
NUTS AND BERRIES after dinner cocktail
Over crushed ice, pour ½ oz Chambord.
Add ¾ oz Frangelico. Stir.
You may wish to add some cream for a different texture or even vanilla ice cream! Yummy!
